Paleta (shoulder ham) is smaller and rounder than Jamon (back leg) that is why it cures much more quickly. It has also a bigger fat concentration that determines its sweeter and more aromatic flavor than Jamon. Jamon Iberico de Bellota is without any doubt the best ham in the World. Like Jamon Iberico it is made from Spain’s native black pigs, that is why is called Pata Negra (black leg), but the animals are selected only between the best free range specimens and only fatted for the last 3-4 months of its life with acorn (bellota). After that it is cured in the mountain under the watchful and experience eye of the ham masters. This makes the meat absolutely sweet, marbled in texture and with an unsurpassed aroma. Sliced thinly at room temperature and enjoy its amazing and unparalleled flavor and texture. Only comparable to the best caviar or the most unique champagne.
